  • 1 lb flank steak
  • 2 cups cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season the flank steak with salt, pepper, and dried oregano.
  3. Grill the steak for about 5-7 minutes on each side, or until desired doneness.
  4. Remove the steak from the grill and let it rest for 5 minutes before slicing.
  5. In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
  6. In a small bowl, whisk together olive oil and lemon juice, then pour over the quinoa mixture.
  7. Toss to combine and season with additional salt and pepper if needed.
