High Protein Stuffed Pepper Soup

  • 1 lb ground turkey or chicken
  • 1 cup quinoa, rinsed
  • 4 cups chicken or vegetable broth
  • 1 can (15 oz) diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, sauté the onion and garlic until translucent.
  2. Add the ground turkey or chicken and cook until browned.
  3. Stir in the diced bell peppers, quinoa, diced tomatoes, broth, cumin, paprika, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 20-25 minutes until quinoa is cooked and peppers are tender.
