2 cups granulated sugar
1/2 cup light corn syrup
1/2 cup water
2 egg whites
1 teaspoon vanilla extract
1 cup chopped nuts (pecans or walnuts)
Instructions
In a saucepan, combine sugar, corn syrup, and water. Cook over medium heat until the mixture reaches 250°F (hard ball stage).
While the sugar mixture is cooking, beat the egg whites in a separate bowl until stiff peaks form.
Once the sugar mixture reaches the desired temperature, slowly pour it into the beaten egg whites while continuing to beat.
Add vanilla extract and chopped nuts, mixing until well combined.
Drop spoonfuls of the mixture onto wax paper and let them cool completely before serving.

Ensure that the egg whites are at room temperature for better volume.
