1 pound ground beef
1 tablespoon olive oil
1 small onion, finely chopped
1 medium carrot, peeled and diced
1 cup frozen peas
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon dried oregano
1/2 teaspoon paprika
2 cups mashed potatoes (prepared from about 3 medium potatoes)
1/4 cup milk
2 tablespoons butter
Peel and dice the carrots into small pieces.
Peel and chop the onion finely.
In a large skillet, heat olive oil over medium heat.
Add the chopped onion and diced carrot to the skillet and cook for 5 minutes until softened.
Add the minced garlic and cook for 1 minute until fragrant.
Add the ground beef to the skillet, breaking it apart with a spatula.
Cook the beef until browned and no longer pink, about 7-8 minutes.
Stir in the frozen peas, salt, black pepper, dried oregano, and paprika.
Cook for an additional 3-4 minutes until peas are heated through and flavors are combined.
While the beef mixture is cooking, prepare mashed potatoes: peel and chop potatoes into chunks.
Place potatoes in a pot of salted water and bring to a boil. Cook for 15 minutes or until tender.
Drain the potatoes and mash them with milk and butter until smooth and creamy.
Serve the seasoned ground beef and vegetable mixture over a bed of mashed potatoes.
