2 medium apples, peeled, cored, and thinly sliced
1 1/2 cups oat flour
1/2 cup vanilla whey protein powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
2 large eggs
1/2 cup unsweetened applesauce
1/3 cup honey
1/4 cup plain Greek yogurt
1 teaspoon vanilla extract
2 tablespoons coconut oil, melted
Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
In a medium bowl, whisk together oat flour, vanilla whey protein powder, baking powder, baking soda, cinnamon, nutmeg, and salt.
In a large bowl, beat the eggs. Add applesauce, honey, Greek yogurt, vanilla extract, and melted coconut oil. Mix well until combined.
Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix.
Spread a thin layer of batter evenly on the bottom of the prepared cake pan.
Arrange a layer of apple slices over the batter, covering the surface.
Pour half of the remaining batter over the apple layer and spread evenly.
Add another layer of apple slices over the batter.
Pour the remaining batter over the apple slices and spread evenly.
Finish with a final layer of apple slices on top, pressing them lightly into the batter.
Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
Remove the cake from the oven and let it cool in the pan for 15 minutes.
Transfer the cake to a wire rack and cool completely before slicing and serving.
