1 box lemon cake mix (about 15.25 ounces)
1 cup water
1/3 cup vegetable oil
3 large eggs
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
1 cup powdered sugar
2 tablespoons fresh lemon juice (for glaze)
Preheat the oven to 350°F (175°C). Grease and flour a 9×9 inch baking pan.
In a large mixing bowl, combine the lemon cake mix, 1 cup water, vegetable oil, and eggs.
Add 2 tablespoons fresh lemon juice and 1 teaspoon lemon zest to the batter. Mix with an electric mixer on medium speed for 2 minutes until smooth.
Pour the batter evenly into the prepared baking pan.
Bake in the preheated oven for 28 to 32 minutes, or until a toothpick inserted into the center comes out clean.
Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer the cake to a wire rack to cool completely.
To make the lemon glaze, whisk together 1 cup powdered sugar and 2 tablespoons fresh lemon juice until smooth.
Once the cake is completely cooled, drizzle the lemon glaze evenly over the top.
Allow the glaze to set for about 15 minutes before slicing and serving.
