4 boneless, skinless chicken breasts
1/4 cup fresh lemon juice
2 tablespoons olive oil
3 cloves garlic, minced
1 tablespoon fresh rosemary, finely chopped
1 tablespoon fresh thyme, finely chopped
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon lemon zest
1 tablespoon fresh parsley, chopped (for garnish)
In a medium bowl, combine the lemon juice, olive oil, minced garlic, chopped rosemary, chopped thyme, salt, black pepper, and lemon zest to create the marinade.
Place the chicken breasts in a large resealable plastic bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 30 minutes, up to 2 hours.
Preheat the oven to 400°F (200°C).
Heat a large oven-safe skillet over medium-high heat. Remove the chicken breasts from the marinade, letting excess drip off, and place them in the hot skillet.
Sear the chicken breasts for 3-4 minutes on each side until golden brown.
Transfer the skillet to the preheated oven and bake for 15-18 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
Remove the skillet from the oven and let the chicken rest for 5 minutes.
