Loaded Potato Skins are a delicious and satisfying snack made from crispy potato halves topped with cheese, bacon, and green onions.

Ingredients

  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup sour cream
  • 1/4 cup chopped green onions
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the potatoes, then pierce them with a fork.
  3. Rub the potatoes with olive oil, salt, and pepper.
  4. Bake the potatoes for 45-60 minutes until tender.
  5. Let the potatoes cool slightly, then cut them in half and scoop out some of the flesh.
  6. Brush the insides with olive oil and return them to the oven for an additional 10-15 minutes until crispy.
  7. Remove from the oven and fill each potato skin with cheese and bacon.
  8. Return to the oven until the cheese is melted.
  9. Top with sour cream and green onions before serving.

Notes

  • For a vegetarian option, omit the bacon.
  • Feel free to add other toppings like jalapeños or avocado.
  • These can be made ahead of time and reheated in the oven.
