A hearty and flavorful beef casserole featuring ground beef, taco spices, and loaded with classic taco toppings baked to perfection. Perfect for a comforting family dinner.
1 pound ground beef
1 medium yellow onion, diced
3 cloves garlic, minced
1 packet (1 ounce) taco seasoning mix
1/2 cup water
1 cup canned black beans, drained and rinsed
1 cup canned corn kernels, drained
1 cup salsa
2 cups shredded cheddar cheese
1 cup crushed tortilla chips
1/2 cup sour cream
1/4 cup sliced black olives
1/4 cup chopped fresh cilantro
1 medium tomato, diced
1 jalapeño pepper, seeded and finely chopped
1/2 cup chopped green onions
1 tablespoon olive oil
Salt, to taste
Freshly ground black pepper, to taste
Preheat the oven to 375°F (190°C).
Heat olive oil in a large skillet over medium heat.
Add diced onion and cook until softened, about 3-4 minutes.
Add minced garlic and cook for an additional 1 minute until fragrant.
Add ground beef to the skillet and cook until browned, breaking it apart with a spoon, about 6-8 minutes.
Drain excess fat from the skillet.
Stir in taco seasoning mix and water, then simmer for 5 minutes, stirring occasionally.
Add black beans, corn, and salsa to the beef mixture. Stir well to combine and cook for 2 more minutes.
Season with salt and freshly ground black pepper to taste.
Transfer the beef mixture to a 9×13 inch casserole dish and spread evenly.
Sprinkle 1 1/2 cups shredded cheddar cheese evenly over the beef mixture.
Top with crushed tortilla chips evenly over the cheese layer.
Bake in the preheated oven for 15 minutes, until cheese is melted and bubbly.
Remove from oven and sprinkle with sliced black olives, diced tomato, chopped green onions, jalapeño, and fresh cilantro.
Add dollops of sour cream on top or serve on the side.
