Low Calorie High Protein Crockpot Chicken

A healthy and delicious crockpot chicken recipe that is low in calories and high in protein, perfect for meal prep or a nutritious dinner.

4 boneless skinless chicken breasts (about 1.5 pounds)
1 cup low sodium chicken broth
1 medium onion, finely chopped
3 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon dried oregano
1/2 teaspoon ground black pepper
1/2 teaspoon salt
1/2 teaspoon crushed red pepper flakes
1 cup diced tomatoes (canned, no salt added)
1 cup chopped bell peppers (mixed colors)
1 tablespoon lemon juice
2 tablespoons chopped fresh parsley

Instructions

Place the chicken breasts at the bottom of the crockpot in a single layer.
Add the chopped onion, minced garlic, diced tomatoes, and chopped bell peppers evenly over the chicken.
Pour the low sodium chicken broth over the ingredients in the crockpot.
Sprinkle smoked paprika, dried oregano, ground black pepper, salt, and crushed red pepper flakes evenly over the chicken and vegetables.
Cover the crockpot and cook on low heat for 4 hours, or until the chicken is cooked through and tender.
Once cooked, remove the chicken breasts and shred them using two forks or leave whole as preferred.
Stir in the lemon juice and sprinkle with chopped fresh parsley before serving.
Serve immediately or portion for meal prep.
