Make Ahead Lemon Chicken

A bright and flavorful lemon chicken recipe that can be prepared in advance and baked when ready. Perfect for a convenient and delicious meal with tender, juicy chicken infused with zesty lemon and herbs.

4 boneless, skinless chicken breasts
1/4 cup freshly squeezed lemon juice
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon lemon zest
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup chicken broth
2 tablespoons unsalted butter
1 tablespoon chopped fresh parsley

Instructions

In a medium bowl, whisk together lemon juice, olive oil, minced garlic, lemon zest, dried oregano, salt, and black pepper.
Place the chicken breasts in a large resealable plastic bag or shallow dish and pour the lemon marinade over the chicken. Seal the bag or cover the dish and refrigerate for at least 2 hours or overnight for best flavor.
When ready to cook, preheat the oven to 375°F (190°C).
Remove the chicken breasts from the marinade and place them in a baking dish. Reserve the marinade.
Pour the reserved marinade and chicken broth over the chicken breasts in the baking dish.
Dot the chicken breasts with small pieces of the unsalted butter.
Bake uncovered for 35 to 40 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Remove the chicken from the oven and spoon some of the pan juices over the top.
Garnish with chopped fresh parsley before serving.
