4 cups chicken broth
1 cup carrots, chopped
1 cup celery, chopped
1 onion, diced
3 cloves garlic, minced
1 tsp thyme
1 tsp rosemary
Salt and pepper to taste
2 tbsp olive oil
1 cup heavy cream
Fresh parsley for garnish
Instructions
In a large pot, heat olive oil over medium heat.
Add diced onion, carrots, and celery; sauté until softened.
Add minced garlic and cook for an additional minute.
Stir in the diced chicken and cook until browned.
Pour in the chicken broth and add thyme, rosemary, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 20 minutes.
Stir in the heavy cream and cook for another 5 minutes.
Garnish with fresh parsley before serving.
