Mexican Beef Stew

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 bell pepper, chopped
  • 1 can (14 oz) diced tomatoes
  • 2 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the beef cubes and brown on all sides.
  3. Remove the beef and set aside. In the same pot, add onion and garlic, sauté until softened.
  4. Add carrots, potatoes, and bell pepper, cooking for a few minutes.
  5. Stir in the diced tomatoes, beef broth, chili powder, cumin, oregano, salt, and pepper.
  6. Return the beef to the pot, bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until the beef is tender.
  7. Garnish with fresh cilantro before serving.

Notes

  • For a spicier stew, add jalapeños or cayenne pepper.
  • This stew can be made in a slow cooker; just adjust the cooking time accordingly.
