Mini Beef Wellington Bites are a delightful and elegant appetizer perfect for parties and gatherings, featuring tender beef wrapped in flaky pastry.

  • 1 lb beef tenderloin, cut into small cubes
  • 1 sheet of puff pastry, thawed
  • 1 cup mushrooms, finely chopped
  • 2 tablespoons Dijon mustard
  • 1 egg, beaten (for egg wash)
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat and sauté the mushrooms until they are browned and moisture has evaporated. Season with salt and pepper.
  3. In the same skillet, sear the beef cubes until browned on all sides. Remove from heat and let cool.
  4. Roll out the puff pastry on a floured surface and cut into squares large enough to wrap around the beef.
  5. Spread a small amount of Dijon mustard on each pastry square.
  6. Place a piece of beef and a spoonful of mushrooms on each square, then fold the pastry over to seal.
  7. Brush the tops with beaten egg.
  8. Bake in the preheated oven for 15-20 minutes or until golden brown.
  9. Serve warm and enjoy!

  • Make sure the beef is not overcooked during the searing process.
