Egg Bake Casserole with Ground Beef

A hearty and delicious egg bake casserole featuring seasoned ground beef, eggs, cheese, and vegetables. Perfect for breakfast, brunch, or a satisfying meal any time of day.

1 pound ground beef
1 small yellow onion, diced
1 small red bell pepper, diced
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon smoked paprika
8 large eggs
1 cup whole milk
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1/4 cup chopped fresh parsley

Instructions

Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spatula, about 5-7 minutes.
Add the diced onion, diced red bell pepper, and minced garlic to the skillet with the ground beef. Cook until the vegetables are softened, about 5 minutes.
Season the beef and vegetable mixture with salt, black pepper, and smoked paprika. Stir to combine and remove from heat.
In a large mixing bowl, whisk together the eggs and whole milk until fully combined.
Spread the cooked ground beef and vegetable mixture evenly in the prepared baking dish.
Pour the egg mixture evenly over the ground beef layer.
Sprinkle the shredded cheddar and mozzarella cheeses evenly over the top.
Bake in the preheated oven for 40-45 minutes, or until the eggs are set and the top is golden brown.
Remove from the oven and let the casserole rest for 5 minutes before slicing.
Garnish with chopped fresh parsley before serving.
