Moroccan-Inspired Avocado Quinoa Salad

A refreshing and nutritious salad that combines the flavors of Morocco with the creaminess of avocado and the protein-packed goodness of quinoa.

Ingredients

  • 1 cup quinoa
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water and cook according to package instructions.
  2. In a large bowl, combine the cooked quinoa, diced avocados, cherry tomatoes, cucumber, red onion, parsley, and mint.
  3. In a small bowl, whisk together the olive oil, lemon juice, ground cumin, salt, and pepper.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
