Nut-Free Cookie Dough Protein Bar

A delicious and healthy nut-free cookie dough protein bar that’s perfect for a quick snack or post-workout treat. Made with oat flour and sunflower seed butter, these bars are packed with protein and free from nuts.

1 cup oat flour
1/2 cup vanilla protein powder
1/4 cup sunflower seed butter
1/4 cup maple syrup
1/4 cup unsweetened applesauce
1/4 cup dairy-free chocolate chips
1 teaspoon vanilla extract
1/4 teaspoon salt
2 tablespoons unsweetened almond milk

Instructions

Preheat the oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving some overhang for easy removal.
In a large mixing bowl, combine the oat flour, vanilla protein powder, and salt. Stir until evenly mixed.
Add the sunflower seed butter, maple syrup, unsweetened applesauce, vanilla extract, and almond milk to the dry ingredients. Mix thoroughly until a thick dough forms.
Fold in the dairy-free chocolate chips evenly throughout the dough.
Transfer the dough to the prepared baking pan. Press it down firmly and evenly with a spatula or your hands.
Bake in the preheated oven for 10 minutes, or until the edges are lightly golden.
Remove from the oven and allow to cool completely in the pan on a wire rack.
Once cooled, lift the dough out of the pan using the parchment paper overhang and cut into 12 equal bars.
Store bars in an airtight container at room temperature for up to 3 days or refrigerate for up to 1 week.
