Nutritious Sesame Chicken with Rice

  • 1 lb chicken breast, diced
  • 2 tablespoons sesame oil
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced
  • 2 cups cooked rice
  • Sesame seeds for garnish

Instructions

  1. In a bowl, mix together sesame oil, soy sauce, honey, rice vinegar, garlic, and ginger.
  2. Add the diced chicken to the marinade and let it sit for at least 30 minutes.
  3. In a large skillet, heat a little oil over medium heat and add the marinated chicken.
  4. Cook the chicken until browned and cooked through, about 5-7 minutes.
  5. Add the broccoli and bell peppers to the skillet and stir-fry for another 3-4 minutes.
  6. Serve the chicken and vegetables over cooked rice and sprinkle with sesame seeds.

  • For a spicier version, add red pepper flakes to the marinade.
