Delicious and nutritious oatmeal cookie energy bites made with oats, almond butter, honey, and warm spices. Perfect for a quick snack or on-the-go energy boost.

1 cup old-fashioned rolled oats
1/2 cup almond butter
1/4 cup honey
1/4 cup ground flaxseed
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1 teaspoon vanilla extract
1/4 cup mini chocolate chips

Instructions

In a large mixing bowl, combine the rolled oats, ground flaxseed, ground cinnamon, ground nutmeg, and salt. Stir until evenly mixed.
Add the almond butter, honey, and vanilla extract to the dry ingredients. Mix thoroughly until the mixture is well combined and sticky.
Fold in the mini chocolate chips evenly throughout the mixture.
Using your hands or a small cookie scoop, form the mixture into 12 equal-sized bite-sized balls.
Place the energy bites on a baking sheet or plate lined with parchment paper.
Refrigerate the energy bites for at least 30 minutes to firm up before serving.
Store the energy bites in an airtight container in the refrigerator for up to 1 week.
