  • 1 lb beef stew meat, cut into cubes
  • 4 cups beef broth
  • 2 cups water
  • 1 cup carrots, sliced
  • 1 cup potatoes, diced
  • 1 cup green beans, chopped
  • 1 cup corn, frozen or fresh
  • 1 cup peas, frozen or fresh
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 bay leaf
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the beef stew meat and brown on all sides.
  3. Add the chopped onion and minced garlic, cooking until the onion is translucent.
  4. Pour in the beef broth and water, bringing to a boil.
  5. Add the carrots, potatoes, green beans, corn, peas, salt, pepper, thyme, and bay leaf.
  6. Reduce heat and let simmer for about 1.5 to 2 hours, or until the beef is tender.
  7. Remove the bay leaf before serving.
