A quick and comforting one-pan meal featuring savory sausage and a medley of fresh vegetables.
1 pound sausage (your choice: pork, chicken, or turkey), sliced
1 red bell pepper, sliced
1 zucchini, chopped
1 yellow squash, chopped
1 small onion, sliced
2 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon dried oregano
Salt and pepper to taste
Fresh parsley for garnish (optional)
Heat olive oil in a large skillet over medium heat.
Add the sausage slices and cook until browned, about 5-7 minutes. Remove and set aside.
In the same skillet, add onion and garlic; sauté for 2 minutes until fragrant.
Add bell pepper, zucchini, and yellow squash. Cook until tender, about 7-8 minutes.
Return sausage to the skillet and sprinkle with oregano, salt, and pepper. Stir to combine and heat through for 2 more minutes.
Garnish with fresh parsley if desired and serve warm.
