One Pot Chicken Quinoa with Mushrooms and Spinach

A healthy and hearty one pot meal combining tender chicken, protein-rich quinoa, earthy mushrooms, and fresh spinach. Perfect for a quick and nutritious dinner.

1 tablespoon olive oil
1 pound boneless skinless chicken breasts, cut into 1-inch pieces
1 medium yellow onion, diced
3 cloves garlic, minced
8 ounces cremini mushrooms, sliced
1 cup quinoa, rinsed
2 cups low sodium chicken broth
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
4 cups fresh baby spinach

Instructions

Heat olive oil in a large deep skillet or pot over medium-high heat.
Add the chicken pieces and cook for 5-6 minutes until browned on all sides but not fully cooked through. Remove chicken and set aside.
In the same pot, add diced onion and cook for 3 minutes until softened.
Add minced garlic and sliced mushrooms to the pot and cook for 4-5 minutes until mushrooms release their moisture and begin to brown.
Add the rinsed quinoa, chicken broth, dried thyme, salt, and black pepper to the pot. Stir to combine.
Return the browned chicken pieces to the pot and bring the mixture to a boil.
Reduce heat to low, cover the pot, and simmer for 15 minutes or until quinoa is cooked and liquid is absorbed.
Remove the lid and stir in the fresh baby spinach. Cook for an additional 2 minutes until spinach is wilted.
Taste and adjust seasoning if needed. Serve warm.
