One Pot Creamy Lasagna Pasta

A quick and easy one pot creamy lasagna pasta that combines all the classic flavors of lasagna in a creamy, cheesy pasta dish. Perfect for a comforting weeknight meal with minimal cleanup.

1 tablespoon olive oil
1 pound ground beef
1 medium onion, finely chopped
3 cloves garlic, minced
2 cups marinara sauce
4 cups chicken broth
8 ounces uncooked lasagna noodles, broken into pieces
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup chopped fresh parsley

Instructions

Heat olive oil in a large pot over medium heat.
Add the ground beef and cook until browned, breaking it up with a spoon, about 5 minutes.
Add the chopped onion and minced garlic to the pot and cook until the onion is translucent, about 3 minutes.
Pour in the marinara sauce and chicken broth, stirring to combine.
Add the broken lasagna noodles, dried basil, dried oregano, salt, and black pepper to the pot. Stir well.
Bring the mixture to a boil, then reduce heat to medium-low and simmer uncovered for 15 minutes, stirring occasionally, until the noodles are tender.
Remove the pot from heat. Stir in the ricotta cheese until creamy and well combined.
Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the top of the pasta. Cover the pot with a lid and let it sit for 5 minutes to allow the cheese to melt.
Garnish with chopped fresh parsley before serving.
