1 tablespoon olive oil
12 ounces Italian sausage, casings removed
1 small yellow onion, finely chopped
3 cloves garlic, minced
1 cup chicken broth
1 (14.5 ounce) can diced tomatoes, undrained
1 cup heavy cream
9 ounces refrigerated cheese tortellini
1/2 teaspoon dried Italian seasoning
1/4 teaspoon crushed red pepper flakes
Salt, to taste
Freshly ground black pepper, to taste
1/2 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley
Heat olive oil in a large deep skillet or Dutch oven over medium heat.
Add Italian sausage to the skillet and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes.
Add chopped onion to the skillet and cook until softened, about 3 minutes.
Stir in minced garlic and cook for 30 seconds until fragrant.
Pour in chicken broth and diced tomatoes with their juice. Stir to combine.
Add heavy cream, dried Italian seasoning, crushed red pepper flakes, salt, and black pepper. Stir well.
Bring the mixture to a gentle boil, then add the cheese tortellini.
