One Pot Creamy Sausage Tortellini

A quick and comforting one pot meal featuring Italian sausage, cheese tortellini, and a rich creamy sauce made with garlic, spinach, and Parmesan cheese. Perfect for an easy weeknight dinner.

1 pound Italian sausage, casings removed
3 cloves garlic, minced
1 small yellow onion, finely chopped
4 cups chicken broth
1 (9-ounce) package refrigerated cheese tortellini
3 cups fresh baby spinach
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 tablespoons olive oil
Salt, to taste
Black pepper, to taste
1/4 teaspoon crushed red pepper flakes (optional)

Instructions

Heat olive oil in a large deep skillet or Dutch oven over medium heat.
Add the Italian sausage, breaking it up with a spoon, and cook until browned and cooked through, about 5-7 minutes.
Add the chopped onion and minced garlic to the skillet and sauté until the onion is translucent and fragrant, about 2-3 minutes.
Pour in the chicken broth and bring to a boil.
Add the refrigerated cheese tortellini to the boiling broth, reduce heat to medium, and cook uncovered for 5 minutes, stirring occasionally to prevent sticking.
Add the fresh baby spinach to the pot and stir until wilted, about 1-2 minutes.
Reduce heat to low and stir in the heavy cream and grated Parmesan cheese until the sauce is creamy and well combined.
Season with salt, black pepper, and crushed red pepper flakes if using. Stir well.
Simmer for an additional 2-3 minutes to allow the flavors to meld and the sauce to thicken slightly.
Remove from heat and serve immediately.
