One Pot Paprika Pasta

A creamy, flavorful one pot paprika pasta that’s quick and easy to make, perfect for a comforting weeknight dinner with minimal cleanup.

12 ounces penne pasta
1 tablespoon olive oil
1 medium yellow onion, finely chopped
3 cloves garlic, minced
1 tablespoon sweet paprika
1/2 teaspoon smoked paprika
1/4 teaspoon crushed red pepper flakes
4 cups vegetable broth
1 cup canned diced tomatoes with juices
1 cup heavy cream
1/2 cup grated Parmesan cheese
Salt, to taste
Freshly ground black pepper, to taste
2 tablespoons chopped fresh parsley

Instructions

Heat the olive oil in a large pot over medium heat.
Add the chopped onion and sauté for 4-5 minutes until softened and translucent.
Add the minced garlic, sweet paprika, smoked paprika, and crushed red pepper flakes. Cook for 1 minute, stirring constantly to release the spices’ aroma.
Pour in the vegetable broth and canned diced tomatoes with their juices. Stir to combine.
Add the penne pasta to the pot and bring the mixture to a boil.
Reduce the heat to medium-low and simmer uncovered, stirring occasionally, until the pasta is tender and most of the liquid is absorbed, about 12-15 minutes.
Stir in the heavy cream and grated Parmesan cheese until the sauce is creamy and well combined.
Season with salt and freshly ground black pepper to taste.
Remove from heat and sprinkle with chopped fresh parsley before serving.
