Ingredients

Scale

1 package (18.5 ounces) peanut butter cookie mix
1/2 cup unsalted butter, melted
1 large egg
1/4 cup creamy peanut butter
1/4 cup granulated sugar
1/2 teaspoon vanilla extract
1/4 cup chopped roasted peanuts
1/4 cup semi-sweet chocolate chips

Instructions

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
In a large mixing bowl, combine the peanut butter cookie mix, melted unsalted butter, and the egg. Stir until the mixture is well combined.
Add the creamy peanut butter, granulated sugar, and vanilla extract to the bowl. Mix thoroughly until the dough is smooth and uniform.
Fold in the chopped roasted peanuts and semi-sweet chocolate chips evenly throughout the dough.
Using a tablespoon or cookie scoop, drop rounded spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Flatten each cookie slightly with the back of a fork, creating a crisscross pattern on top.
Bake the cookies in the preheated oven for 10 to 12 minutes, or until the edges are lightly golden but the centers remain soft.
Remove the cookies from the oven and allow them to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
