Pecan Pie Layer Cake

A delicious and decadent Pecan Pie Layer Cake that combines the flavors of a classic pecan pie with the richness of a layer cake.

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped pecans
  • 1 cup pecan pie filling

Instructions

  1. Preheat the oven to 350°F (175°C) and grease three 9-inch round cake pans.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the buttermilk and vanilla extract.
  5. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Fold in the chopped pecans.
  8. Divide the batter evenly among the prepared cake pans.
  9. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  10. Let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.
  11. Once cooled, layer the cakes with pecan pie filling in between each layer and frost the top and sides with your favorite frosting.

Notes

  • For a richer flavor, use brown sugar instead of granulated sugar.
  • Make sure the butter is at room temperature for easier mixing.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
