  • 1/4 cup brown sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour

  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1/4 teaspoon salt
  • 1/4 cup sugar (for coating)
  • 1 teaspoon cinnamon (for coating)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a mini muffin pan.
  2. In a large bowl, mix together the pumpkin puree, sugar, brown sugar, vegetable oil, eggs, and vanilla extract until well combined.
  3. In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fill each muffin cup about 2/3 full with the batter.
  6. Bake for 10-12 minutes or until a toothpick inserted comes out clean.
  7. While the donut holes are baking, mix the sugar and cinnamon for coating in a small bowl.
  8. Once baked, let the donut holes cool for a few minutes before rolling them in the cinnamon sugar mixture.
