  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 4 oz cream cheese, softened

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together pumpkin puree, sugar, brown sugar, vegetable oil, and eggs until well combined.
  3. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. In a separate bowl, beat the softened cream cheese until smooth.
  6. Fill each muffin cup halfway with the pumpkin batter, then add a spoonful of cream cheese, and top with more pumpkin batter.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  8. Let cool before serving.

  • For a sweeter muffin, add chocolate chips or nuts.
