  • 1 can (15 oz) pumpkin puree
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups spinach
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup vegetable broth

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the pasta according to package instructions until al dente, then drain.
  3. In a large bowl, mix together the pumpkin puree, ricotta cheese, garlic, Italian seasoning, salt, and pepper.
  4. Add the cooked pasta, spinach, and vegetable broth to the pumpkin mixture and stir until well combined.
  5. Transfer the mixture to a greased baking dish and top with mozzarella and Parmesan cheese.
  6. Bake for 25-30 minutes or until the cheese is bubbly and golden.
  7. Let it cool for a few minutes before serving.
