  • 2 cups all-purpose flour
  • 3 large eggs
  • 1 cup pumpkin puree
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon nutmeg
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons olive oil
  • Fresh sage leaves for garnish

Instructions

  1. In a bowl, mix the flour and eggs to form a dough.
  2. Knead the dough for about 10 minutes until smooth.
  3. Wrap the dough in plastic wrap and let it rest for 30 minutes.
  4. In another bowl, combine pumpkin puree, ricotta, Parmesan, nutmeg, salt, and pepper.
  5. Roll out the dough into thin sheets.
  6. Place small dollops of the filling on one sheet, then cover with another sheet of dough.
  7. Cut out ravioli shapes and seal the edges.
  8. Boil the ravioli in salted water for 3-4 minutes until they float.
  9. In a pan, heat olive oil and sauté sage leaves.
  10. Serve the ravioli topped with sage oil and additional Parmesan.
