1 pound ground turkey
1 tablespoon olive oil
1 medium yellow onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
1 medium zucchini, diced
1 cup cherry tomatoes, halved
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon dried oregano
1/4 teaspoon crushed red pepper flakes
Salt, to taste
Black pepper, to taste
1/4 cup chopped fresh cilantro
Heat olive oil in a large skillet over medium heat.
Add diced onion and cook for 3-4 minutes until softened.
Add minced garlic and cook for 1 minute until fragrant.
Add ground turkey to the skillet, breaking it up with a spatula. Cook until browned and cooked through, about 6-8 minutes.
Stir in diced red bell pepper and zucchini, cooking for 4-5 minutes until vegetables are tender.
Add cherry tomatoes, ground cumin, smoked paprika, dried oregano, crushed red pepper flakes, salt, and black pepper. Stir well to combine.
Cook for an additional 2-3 minutes until tomatoes soften and flavors meld.
Remove from heat and stir in chopped fresh cilantro.
Serve hot as a standalone dish or with rice or tortillas.
