  • 6 large eggs
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder.
  3. Add the chopped spinach and crumbled feta cheese to the egg mixture and stir to combine.
  4. Grease a muffin tin with cooking spray or line with muffin liners.
  5. Pour the egg mixture evenly into the muffin tin, filling each cup about 3/4 full.
  6. Bake in the preheated oven for 18-20 minutes, or until the muffins are set and lightly golden on top.
  7. Allow to cool for a few minutes before removing from the muffin tin.
  8. Serve warm or store in the refrigerator for later use.
