2 salmon fillets, skin removed, about 6 ounces each
1 tablespoon olive oil
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
1 cup cooked jasmine rice
1/2 cup shredded carrot
1/2 cup cucumber, thinly sliced
1/2 avocado, sliced
2 green onions, thinly sliced
1 tablespoon sesame seeds
1/4 cup mayonnaise
1 tablespoon Sriracha sauce
1 teaspoon lime juice
Preheat the air fryer to 400°F (200°C) for 5 minutes.
In a small bowl, mix olive oil, garlic powder, smoked paprika, salt, and black pepper.
Brush the salmon fillets evenly with the seasoned olive oil mixture.
Place the salmon fillets in the air fryer basket in a single layer.
Cook the salmon in the air fryer for 10 to 12 minutes, or until the salmon flakes easily with a fork.
While the salmon cooks, prepare the spicy mayo by combining mayonnaise, Sriracha sauce, and lime juice in a small bowl. Mix well and set aside.
Divide the cooked jasmine rice evenly between two bowls.
Top each bowl of rice with shredded carrot, sliced cucumber, avocado slices, and green onions.
Place the cooked salmon fillets on top of the vegetables in each bowl.
Drizzle the spicy mayo over the salmon and garnish with sesame seeds.
