Roasted Butternut Squash with Candied Walnuts

A delicious and healthy dish featuring roasted butternut squash topped with sweet candied walnuts.

  • 1 medium butternut squash, peeled and cubed
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup walnuts
  • 1/2 cup brown sugar
  • 1/4 cup water
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the cubed butternut squash with olive oil, salt, and pepper.
  3. Spread the squash on a baking sheet and roast for 25-30 minutes until tender.
  4. In a saucepan, combine walnuts, brown sugar, water, and cinnamon over medium heat.
  5. Cook until the sugar dissolves and the mixture thickens, about 5 minutes.
  6. Remove from heat and let cool slightly.
  7. Once the squash is done, top it with the candied walnuts before serving.

Notes

  • For a spicier flavor, add a pinch of cayenne pepper to the squash.
  • Store leftover candied walnuts in an airtight container.
  • This dish can be served warm or at room temperature.
