Salmon Potato Dinner

A simple and delicious salmon potato dinner featuring oven-roasted salmon fillets and crispy roasted potatoes, seasoned with garlic and fresh herbs for a comforting and healthy meal.

Ingredients

4 salmon fillets (6 ounces each), skin on
1.5 pounds baby potatoes, halved
3 tablespoons olive oil, divided
4 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt, to taste
Black pepper, to taste
1 lemon, sliced
2 tablespoons fresh parsley, chopped

Instructions

Preheat the oven to 425°F (220°C).
In a large bowl, toss the halved baby potatoes with 2 tablespoons of olive oil, minced garlic, dried thyme, dried rosemary, salt, and black pepper until evenly coated.
Spread the potatoes in a single layer on a baking sheet lined with parchment paper or foil.
Roast the potatoes in the preheated oven for 15 minutes.
While the potatoes are roasting, pat the salmon fillets dry with paper towels and season both sides with salt and black pepper.
After the potatoes have roasted for 15 minutes, remove the baking sheet from the oven and push the potatoes to one side.
Place the salmon fillets skin-side down on the empty side of the baking sheet.
Drizzle the salmon with the remaining 1 tablespoon of olive oil and place lemon slices on top of each fillet.
Return the baking sheet to the oven and roast for an additional 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork and the potatoes are golden and tender.
Remove from the oven and sprinkle fresh chopped parsley over the salmon and potatoes before serving.
