1 pound boneless skinless chicken breasts
2 tablespoons olive oil
2 tablespoons fresh lime juice
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
8 small corn tortillas
1 cup shredded red cabbage
1/2 cup chopped fresh cilantro
1/2 cup diced red onion
1 jalapeño pepper, thinly sliced
1/2 cup crumbled queso fresco
1 lime, cut into wedges

Instructions

In a medium bowl, combine olive oil, fresh lime juice, minced garlic, ground cumin, chili powder, smoked paprika, salt, and black pepper to create the marinade.
Place the chicken breasts in the marinade, ensuring they are fully coated. Cover and refrigerate for at least 15 minutes.
Preheat a grill or grill pan over medium-high heat.
Remove the chicken from the marinade and grill for 6 to 7 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through.
Once cooked, transfer the chicken to a cutting board and let it rest for 5 minutes.
Slice the grilled chicken into thin strips.
Warm the corn tortillas on the grill for about 30 seconds on each side until pliable and slightly charred.
Assemble the tacos by placing sliced chicken on each tortilla, then topping with shredded red cabbage, chopped cilantro, diced red onion, sliced jalapeño, and crumbled queso fresco.
Serve immediately with lime wedges on the side for squeezing over the tacos.
