Sardinian Longevity Soup

A traditional Sardinian soup known for its nourishing ingredients and association with longevity. This hearty soup combines fresh vegetables, beans, and aromatic herbs to create a wholesome and flavorful dish.

Ingredients

2 tablespoons extra virgin olive oil
1 medium onion, finely chopped
2 cloves garlic, minced
2 medium carrots, peeled and diced
2 celery stalks, diced
1 medium zucchini, diced
1 medium potato, peeled and diced
1 cup dried cannellini beans, soaked overnight and drained
6 cups vegetable broth
1 (14-ounce) can diced tomatoes, with juice
1 teaspoon dried rosemary
1 teaspoon dried thyme
1 bay leaf
Salt, to taste
Freshly ground black pepper, to taste
2 cups chopped kale leaves, tough stems removed
1/4 cup chopped fresh flat-leaf parsley

Instructions

Heat the extra virgin olive oil in a large pot over medium heat.
Add the chopped onion and sauté for 5 minutes until translucent.
Add the minced garlic and cook for 1 minute until fragrant.
Add the diced carrots, celery, zucchini, and potato to the pot. Cook for 5 minutes, stirring occasionally.
Add the soaked and drained cannellini beans, vegetable broth, diced tomatoes with their juice, dried rosemary, dried thyme, and bay leaf to the pot. Stir to combine.
Bring the soup to a boil, then reduce the heat to low and simmer, uncovered, for 1 hour or until the beans and vegetables are tender.
Remove the bay leaf and season the soup with salt and freshly ground black pepper to taste.
Add the chopped kale leaves to the pot and cook for an additional 5 minutes until the kale is wilted and tender.
Stir in the chopped fresh parsley just before serving.
Ladle the soup into bowls and serve hot.
