  • 4 chicken thighs
  • 2 cups Brussels sprouts, halved
  • 2 cups butternut squash, cubed
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the Brussels sprouts and butternut squash with olive oil, garlic powder, paprika, salt, and pepper.
  3. Place the chicken thighs on a sheet pan and surround them with the vegetable mixture.
  4. Drizzle a little more olive oil over the chicken and season with additional salt and pepper.
  5. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
