Sheet Pan Chicken and Sweet Potatoes with Apples and Veggies

A delicious and easy one-pan meal featuring chicken, sweet potatoes, apples, and a variety of vegetables, perfect for a weeknight dinner.

  • 4 chicken thighs
  • 2 medium sweet potatoes, cubed
  • 2 apples, sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red onion, sliced
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the sweet potatoes, apples, bell peppers, and onion.
  3. Drizzle with olive oil and season with garlic powder, paprika, salt, and pepper. Toss to coat.
  4. Spread the vegetable mixture on a sheet pan.
  5. Place the chicken thighs on top of the vegetables.
  6. Drizzle the chicken with a little more olive oil and season with salt and pepper.
