2 medium sweet potatoes, peeled and cut into 1-inch cubes
1 pound Italian sausage links, sliced into 1/2-inch pieces
1 red bell pepper, seeded and cut into 1-inch pieces
1 yellow bell pepper, seeded and cut into 1-inch pieces
1 medium red onion, peeled and cut into 1-inch wedges
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups broccoli florets
Preheat the oven to 425°F (220°C).
In a large bowl, combine the sweet potato cubes, sliced sausage, red bell pepper pieces, yellow bell pepper pieces, and red onion wedges.
