  • 1 pound Italian sausage
  • 2 cups cherry tomatoes
  • 1 bell pepper, sliced
  • 1 red onion, sliced
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. On a large sheet pan, combine the gnocchi, sausage, cherry tomatoes, bell pepper, and red onion.
  3. Drizzle with olive oil and sprinkle with garlic powder, salt, and pepper.
  4. Toss everything together until well coated.
  5. Spread the mixture out in an even layer.
  6. Bake for 20-25 minutes, or until the sausage is cooked through and the vegetables are tender.
  7. Remove from the oven and garnish with fresh basil before serving.
