A simple and hearty one-pan meal featuring savory sausage, tender roasted potatoes, and sweet carrots, all cooked together for an easy and delicious dinner.
1 pound smoked sausage, sliced into 1/2-inch thick rounds
1 pound baby potatoes, halved
4 large carrots, peeled and cut into 1/2-inch thick sticks
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon dried thyme
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons fresh parsley, chopped (for garnish)
Preheat the oven to 425°F (220°C).
In a large bowl, combine the halved baby potatoes and carrot sticks.
Add the olive oil, garlic powder, dried thyme, smoked paprika, salt, and black pepper to the bowl. Toss everything together until the vegetables are evenly coated with the oil and seasonings.
Spread the seasoned potatoes and carrots evenly on a large sheet pan.
Place the sliced sausage rounds on top of the vegetables in a single layer.
Roast in the preheated oven for 30 to 35 minutes, stirring the vegetables and turning the sausage slices halfway through cooking, until the potatoes are tender and golden and the sausage is browned.
Remove the sheet pan from the oven and sprinkle the chopped fresh parsley over the top.
