1 pound smoked sausage, sliced into 1/2-inch thick rounds
1 pound baby potatoes, halved
4 large carrots, peeled and cut into 2-inch pieces
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon dried thyme
1 teaspoon smoked paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
Preheat the oven to 425°F (220°C).
In a large bowl, combine the halved baby potatoes and carrot pieces.
Add 2 tablespoons of olive oil, 1 teaspoon garlic powder, 1 teaspoon dried thyme, 1 teaspoon smoked paprika, 1/2 teaspoon salt, and 1/2 teaspoon black pepper to the bowl with the vegetables. Toss well to coat evenly.
Spread the seasoned potatoes and carrots in a single layer on a large sheet pan.
Place the sliced smoked sausage evenly over the vegetables on the sheet pan.
