Shredded Chicken Poblano and Black Bean Soup

  • 1 cup black beans, drained and rinsed
  • 2 poblano peppers, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, sauté the onion and garlic until translucent.
  2. Add the diced poblano peppers and cook for another 5 minutes.
  3. Stir in the shredded chicken, black beans, cumin, chili powder, salt, and pepper.
  4. Pour in the chicken broth and bring to a boil.
  5. Reduce heat and let simmer for 20 minutes.
  6. Serve hot, garnished with fresh cilantro.
