Shrimp Quesadilla with Avocado

A delicious and easy-to-make shrimp quesadilla filled with creamy avocado and melted cheese, perfect for a quick meal or snack.

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 avocado, sliced
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 4 flour tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add shrimp, garlic powder, cumin, salt, and pepper. Cook until shrimp are pink and cooked through, about 3-4 minutes.
  3. Remove shrimp from skillet and set aside.
  4. In the same skillet, place one tortilla and sprinkle half of the cheese on one half of the tortilla.
  5. Add a layer of cooked shrimp and avocado slices on top of the cheese.
  6. Sprinkle the remaining cheese over the shrimp and fold the tortilla in half.
  7. Cook for 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted.
  8. Repeat with remaining tortillas and filling.
  9. Cut into wedges and serve warm.

Notes

  • Feel free to add other vegetables like bell peppers or onions for extra flavor.
  • Serve with salsa or sour cream for dipping.
  • Can be made gluten-free by using corn tortillas.
