1 pound boneless skinless chicken breasts
4 cups low-sodium chicken broth
1 medium onion, diced
3 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup heavy cream
1 (10-ounce) package refrigerated potato gnocchi
3 cups fresh baby spinach
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
Place the chicken breasts in the bottom of the slow cooker.
Add the diced onion, minced garlic, dried thyme, dried basil, salt, and black pepper over the chicken.
Pour the chicken broth over all the ingredients in the slow cooker.
Cover and cook on low for 3 to 4 hours, until the chicken is cooked through and tender.
Remove the chicken breasts from the slow cooker and shred them using two forks.
Return the shredded chicken to the slow cooker.
Stir in the heavy cream, baby spinach, and gnocchi.
