Slow Cooker Detox Soup

2 tablespoons olive oil
1 large yellow onion, diced
3 cloves garlic, minced
3 medium carrots, peeled and chopped
2 celery stalks, chopped
1 medium zucchini, chopped
1 medium yellow bell pepper, chopped
1 cup green beans, trimmed and cut into 1-inch pieces
1 cup chopped kale, ribs removed
1 cup chopped spinach
1 (14.5 ounces) can diced tomatoes, with juice
6 cups low sodium vegetable broth
1 teaspoon ground turmeric
1 teaspoon ground cumin
1/2 teaspoon ground black pepper
1/2 teaspoon sea salt
1/4 teaspoon cayenne pepper
2 tablespoons fresh lemon juice
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh cilantro

Instructions

Heat olive oil in a skillet over medium heat.
Add diced onion and sauté for 3-4 minutes until translucent.
Add minced garlic and cook for 1 more minute until fragrant.
Transfer the sautéed onion and garlic to the slow cooker.
Add chopped carrots, celery, zucchini, yellow bell pepper, green beans, kale, spinach, and diced tomatoes with their juice to the slow cooker.
Pour in the vegetable broth.
Add ground turmeric, ground cumin, black pepper, sea salt, and cayenne pepper to the slow cooker.
Stir all ingredients together to combine.
Cover and cook on low for 6 hours until the vegetables are tender.
Once cooked, stir in fresh lemon juice, chopped parsley, and chopped cilantro.
Taste and adjust seasoning with additional salt or pepper if desired.
Serve warm.
