2 pounds Trader Joe’s beef tips
1 tablespoon olive oil
1 medium yellow onion, diced
3 cloves garlic, minced
1 cup beef broth
1/2 cup red wine
2 teaspoons dried rosemary
1 teaspoon dried thyme
1/2 teaspoon black pepper
1 teaspoon salt
2 tablespoons cornstarch
2 tablespoons cold water
Heat olive oil in a skillet over medium-high heat.
Add the beef tips and sear for 2-3 minutes on each side until browned. Transfer the beef tips to the slow cooker.
In the same skillet, add the diced onion and cook for 3-4 minutes until softened.
Add the minced garlic and cook for 1 minute until fragrant.
Pour in the beef broth and red wine, scraping any browned bits from the skillet.
Stir in dried rosemary, dried thyme, salt, and black pepper.
Pour the mixture over the beef tips in the slow cooker.
Cover and cook on low for 6 hours or until the beef is tender.
About 15 minutes before serving, mix cornstarch and cold water in a small bowl to create a slurry.
Stir the slurry into the slow cooker to thicken the sauce.
Cover and cook on high for an additional 15 minutes until the sauce has thickened.
Serve hot over mashed potatoes, rice, or noodles.
